A new dessert and cocktail lounge officially opened Thursday in the 1600 block of Main Street Columbia.

The Robinson Room, which is located in the lower level of The Grande on Main, will feature several gourmet desserts created through a collaboration between Michelin Star pastry chef and New York-based culinary expert Rory Macdonald, and the Grand on Main team.

Vice president of branding and marketing, Charlotte Knopp, said the Robinson Room is made to provide guests with a memorable experience.

"We want to give this elevated experience, but at the same time we want it to have that community, Southern feel," she said.

The room provides a modern aesthetic with mood lighting, a couch with colorful throw pillows, white table linens and a line of tropical trees running down an exposed brick wall.

According to Knopp, there will be three standard desserts offered. Each is hand-crafted and original to the Robinson Room including items like a "PB&J": a peanut butter parfait with banana sorbet, smoked and garnished with a raspberry candy on top, presented in a mason jar. There will also be additional options that will rotate. Knopp said one of the rotating desserts they offered opening night was a rice pudding with roasted peaches and toffee. The desserts can be paired with rare and exclusive liquors.

 "We want people to go a little out of their comfort  zone, but still have some familiarity with it," she said.

Macdonald said he is excited about the project. "I'm thrilled to bring my unique perspective on dessert concoctions and display my passion for excellence in this partnership with The Grand on Main in the new Robinson Room. We will offer top-notch desserts, coupled with one-of-a-kind atmosphere and a bar with exclusive selections and tasty cocktails," he said.

The Robinson Room's in-house team will consist of pastry chefs Kyle Smothers, winner of the Food Network's Holidays Wars, and Lynn Fairweather, experienced chef of more than 25 years.

The room can seat between 35 to 40 guests. Knopp said reservations are recommended. The dessert bar is open Wednesdays through Sundays from 4:30 p.m. to midnight. Additional information can be found on The Grand on Main's Facebook page and thegrandonmain.com.
