Lexington is getting a little sweeter with the opening of Mingos Cookies Bubble Tea & Café.

Owner Richard Pellerano is from the Dominican Republic and grew up in Miami, but after working in the corporate world, his travels led him to the Midlands. "I love it here," Pellerano said. "I love the kindness of the people and the Southern hospitality."

Pellerano said he and his wife enjoy desserts and cooking so they drew up a plan to open a dessert shop in the place they met and raised their children. "I decided to go back to school at 38 for baking and pastries," Pellerano said.

The name Mingos comes from the flamingo bird. Pellerano said the dessert shop has an exotic feel and the recipes came about by pulling flavors from the various places he's traveled throughout the United States and across the world.

"Our concept is whatever dessert you can make in your head, we’re going to make it into a cookie," Pellerano said. "We’re very passionate about this, we've done a lot of this with our bare hands and we’ve put a lot of love in this place."

Menu items will include cookies with flavors like sugar, chocolate, birthday cake, s'mores, red velvet cheesecake, fruity pebbles, banana pudding torch meringue cookie, cinnamon toast crunch, and a "Havana ooh la la" cookie which is stuffed with cheesecake with guava, topped with cream cheese and drizzled with passion fruit.

Mingos will also serve Nutella-stuffed, brownies, Oreo-filled brownies and various other brownies. On the beverage menu, bubble tea with seasonal flavors and different flavored boba will be available along with coffee and flavored milks.

Pellerano said the aesthetic and design of Mingos is also something he and his wife have worked hard on. "We’ve created an environment that my wife calls ‘Tik Tok or Instagrammable,’” he said. "We want it to be a place to do school work and hang out with friends."

The dessert shop will open in the Kitty's Korner shopping center in Lexington at 5580 Sunset Blvd.

Hours of operation will be Monday through Thursday from 10 a.m. to 10 p.m., Friday and Saturday from 10 a.m. until midnight and Sunday from 12 p.m. until 8 p.m.

A ribbon cutting will be held Mar. 5 and a grand opening celebration will be held Mar. 6. Additional updates and information will be available on Mingos' Facebook and Instagram pages.
