El Jimador Restaurante opens in Village at Sandhill

The latest in the growing chain of El Jimador Mexican restaurants is now open at 715 Fashion Drive in the Village at Sandhill.

El Jimador features made-from-scratch dishes using fresh, local ingredients. The menu includes traditional Mexican favorites — including burritos, quesadillas, fajitas, enchiladas and tacos — plus seafood, vegetarian dishes, burgers, salads, wings, appetizers and desserts.

“I grew up smelling and enjoying my mom’s cooking,” says chef Francisco Macias on the restaurant’s website. Macias is one of the brothers who own and run El Jimador. “Her love for preparing fresh vegetables and chiles to make her special authentic Mexican recipes had such an impact on my life. I have always wanted to share our family’s love for fresh traditional food.”

The restaurant is open 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 10:30 p.m. Friday and Saturday, and 11 a.m. to 9:30 p.m. Sunday.

Other El Jimador locations include Scarborough Drive in Lexington, Sunset Boulevard in Lexington, plus restaurants in Clemson and Anderson. Owner Eric Macias said another location will open on Knox Abbot Drive in Cayce this fall.
